Old Tom was a precursor of the now-ubiquitous London Dry style, a new version of the old-style gin. Modern gin had been sweetened to hide harsh impurities.
Folklore has it that Old Tom gin would be served under a wooden plaque of a black cat (hence its name) through a hole in the wall. The client would put his coin in the mouth of the cat, and receive a gin shot through a tube between his paws.
